This just one of those DIY projects that we whole-heartily can get behind, hold the flag and hail it from all traffic stops. Nicole Adams of Gingerspice Bakery created these beyond beautiful treats that are essentially wedding cakes to go in small cups. These cup finds from our partner Beaucoup and a sweet tooth are all you need to make these DIY Cake in a Cup treats captured by We Are the Castros.
What you will need:
Ice cream pint containers with lids
Stand mixer or hand mixer
Spatula
Piping bags with piping tips
You will also need:
•red velvet cake recipe (recipe follows)
•no-bake cheesecake recipe (recipe follows)
•assorted decorations: fresh edible flowers, berries, chocolate ganache, buttercream, sprinkles – you name it!
Assembly:
Pre-heat oven to 350º.
Set out paper cups on a sheet pan and pour red velvet cake batter into each cup, just under half-way full. The cake batter will rise to between half-way and three-quarters high. Place in oven and bake, rotating once, for 15-18 minutes or until an inserted toothpick comes out clean. Set aside to cool (the freezer works great!).
While the cups are cooling, whip together the no-bake cheesecake. Using a 2oz cookie scoop, dollop the batter into each cup as full as you like and tap cups on your work surface to level the batter. Cover with plastic and return the cups to the freezer until set (about 2-4 hours).
Remove your cups from the freezer and decorate to your heart’s content! Using buttercream, pipe rosettes or fluted dollops; arrange edible flowers and berries; or drizzle melted ganache over top. Enjoy!
